Whenever you go camping, you should always aim for easy-to-cook or easy-to-prepare meals that will fill you and give you energy for outdoor activities. Sandwiches are simply a great choice because they’re grab and go, perfect for a day of hiking or exploring the woods.
But this time, try something new other than the plain peanut butter and jelly kind – try these yummy campfire sandwiches that are oh-so-satisfying!
The Ultimate Campfire Breakfast Sandwich
What you need:
- 4 sourdough English muffins
- 4 eggs
- 2 cups BBQ pulled pork (can be leftover)
- 4 slices cheddar cheese
- Butter
Melt the butter in a medium-sized cast iron pan over campfire then crisp up the muffins quickly until gold and crispy. Set aside. Reheat the BBQ pulled pork on the same pan until heated through. Remove from pan and set aside. Lastly, fry the eggs however you like it (runny is best!).
To assemble the sandwich, put 1/2 cup pulled pork, 1 slice of cheddar cheese and 1 egg. Wrap in foil and place over the campfire for 30 seconds or until cheese has melted.
Pie Iron Campfire Pizza Sandwich
What you need:
- Pre-made pizza dough
- 1 green bell pepper, diced
- 1 cup low-moisture shredded mozzarella cheese
- 1/2 cup pizza sauce
- 1/2 cup sliced black olives
- 16 slices pepperoni
- Oil
Divide the pizza dough into 8, stretch and flatten into squares about 4.5 x 4.5 inches. Brush or spray the pie iron with oil and place a dough square on the bottom plate. Place 1/4 of the pizza suce, mozzarella cheese, bell pepper, olives and pepperoni. Top with another dough square. Close and lock the pie iron. Depending on the intensity of your fire, cook your sandwich over it for 2-3 minutes, or until crust is golden brown.
Remove from pie iron and allow to cool on a plate. Repeat with remaining ingredients.
Ham and Cheese Campfire Rolls
What you need:
- 12 Hawaiian rolls
- 1/2 kg. deli-sliced ham
- 12 slices Provolone cheese
- 1/2 cup butter, melted
- 1 1/2 tablespoons Dijon mustard
- 1 tablespoon dried onion
- 1 tablespoon brown sugar
In a small bowl, combine the butter, mustard, onion and brown sugar. Set aside. Prepare 6 sheets of heavy duty foil. Slice open each roll and place 1 ham and 1 slice of cheese on each. Close the sandwich. Place 2 rolls in each foil the pour butter mixture evenly on top of the rolls.
Seal foil packets and heat over arm campfire coals, 10-15 minutes or when rolls are toasted and cheese is melted.
